ON FOOD ~ Holiday Spinach Salad...


A friend of ours had a pumpkin carving party and Molly felt obligated to bring something. Knowing that Molly doesn't know how to cook, said friend kindly offered the task of a salad. Molly sought out the help of another friend - Kate from Maine - who always whips up a yummy salad. Here is what Kate from Maine came up with and it was a tremendous hit all around. We are posting it now as a suggestion for livening up your Turkey Day...

1. 1 package Baby Spinach leaves

2. 1 package Ocean Spray Craisons
3. 2 chopped Apples (orchard picked/local farm source preferred)
4. 1 container Gorgonzola Cheese (6-8 ozs.)
5. 1 package Pecans (1/2 lb.) - TOASTED

Top the salad off with this Maple Vinagrette Dressing recipe from Rachel Ray, which we double in order to have the option of excessive sweetness:

  • Pour 1 & 1/2 Tbsp. Cider Vinegar in a small bowl
  • In a slow stream whisk in 1/4 Cup Extra Virgin Olive Oil
  • Slowly whisk in 1/4 Cup WARMED Maple Syrup (fresh local source preferred)
  • Season with salt & ground pepper to taste
