ON FOOD ~ Simple Scrolls...

Molly's Mom & Dad hosted Thanksgiving and served these delicious Ham & Cheese Scrolls as an appetizer while sitting around the fire watching football and waiting for the turkey to be ready. Molly turned her nose up at them originally because they feature Swiss cheese. But after watching everyone else devour them (and because she was pretty hungry after that long traffic riddled car ride) she broke down and tried one. One became two, became half a dozen! Another batch had to be made to keep the hungry mob at bay. Molly wrote down the recipe and it was so simple even she was able to make them! We brought some to a Christmas party this weekend and they too were devoured in no time at all. Mom would be proud!

1. 1 sheet Puff Pastry Dough, thawed
2. 2 Tbsps. commercial Pesto
3. 6 thin slices Honey Ham
4. 6 thin slices Swiss Cheese
  • Spread the Pesto over the sheet of Puff Pastry dough
  • Top with the Honey Ham slices
  • Layer the Swiss Cheese slices over them
  • Start rolling the long side of the dough and continue until reaching the middle of the pastry sheet
  • Roll the opposite side to meet the first roll in the middle
  • Cut the roll into 1/2" thick slices with a bread knife
  • Place the slices on a cookie sheet lined with parchment paper and bake at 425 degrees for 15 minutes or until golden brown
  • Serve warm or room temperature

These look really yummy. I'm going to have to try them. Have you ever had pesto over cooked spaghetti? Mmmm and simple. Good job on the cooking! :)
